Solar water heater panels installed!

This past fall, New Urban Farmers launched an online Kickstarter campaign to raise funds to build a solar water heater and composting systems to keep our domes warm so that we may grow throughout the year. January 2012 marked the installation of six solar water heater panels. They were mounted on a wooden stand that volunteers from Johnson and Wales University built with help from our friend Fabio. The stand was constructed on a cold December Saturday but our crew toughed it out. We mounted the stand on top of the south facing hillside behind the aquaponics dome to receive the most sunlight during the day. We will update again and let you know how the panels perform. A big thank you to all our Kickstarter backers for giving us the capacity to get this job done right! We would also like to thank our many community volunteers from Johnson and Wales, Galego Court, and Pawtucket.

“This corn is da bomb,” said Pitio, a 7-year-old boy, as he eagerly munched on a freshly roasted ear of succulently sweet corn on an overcast late September afternoon.

The delicious smell of roasting corn, fresh from a farm adjacent to New Urban Farmers’ (NUF) five-acre farm in Seekonk, Massachusetts, tempted both adults and children working or lounging in NUF’s community garden in a Pawtucket public housing development, Galego Court, on Weeden Street.

Founded in 2008 and incorporated in 2009, NUF works to increase access to healthy food for individuals and families in Pawtucket and Central Falls, cities whose low-income residents suffer from lack of access to fresh fruits and vegetables. Their mission: “A community that grows together, grows together.” NUF empowers low-income individuals, families and at-risk youth with education and collaboration.

Nearly 20 years ago, the one and one-half acre spot had been a playground; the Pawtucket Housing Authority—whom Emily Jodka, assistant director, praises for their contributions—and NUF cleared the overgrown lot to create some 100 garden beds for the housing development residents.

Easy Pisy Mashed Tortillas

1 1/2 c water
4 c dried or 2 can beans (pinto & red)
1 carrot (shredded)
1/2 c quinoa
1/2 c lime juice (to taste)
1/2 onion (diced)
Sriracha (or other hot sauce)
jalapenos (jar or fresh)
garlic (diced)
1 Tbs olive oil
Corn Tortillas

On high, saute onion, garlic in olive oil.
Add beans, quinoa, lime juice, jalapeno, Sriracha, carrot, and water.
Smash beans with whatever you have on hand (I use the bottom of a jar)
Cover and let sit 15 min or until quinoa is soft but still has some crunch.
Add water while cooking as needed.

The Learning Community after school programming

Just had our last day with our after school gardening crew at the Learning Community. We are proud of our gardeners.

It was tough once the weather made us hold class inside but kept it interesting.
We made macrame plant hangers with simple knots, twine, beads, small pots, and some seeds
made hydroponic planters with some stones, aluminum container, and all sorts of bulbs
painted a garden sign,
made salad, potatoes, and the kids made their own honey mustard dressing which was a big hit
We also showed clips of Microcosmos, you can find the whole movie on YouTube.
It follows the life in a field with a microscopic lens, the first film of its kind.
It only contains music and audio from the field so it is a great piece to turn on at the end of class or during another activity.

Organization on a farm can be tough. Searching online definitely provided some good ideas. The best site I came across were tips from Martha Stewart catalog funny enough. What types of organizing do you use in your garage/garden/shed?

Organizing with some aluminum cans and pegboard.

Aluminum can organizers
We collected aluminum cans from our use and from recycling bins, rinsed them out well, drilled two small holes in the can, and wrapped a wire through them to make a loop. We attached a small amount of duct tape to the inside to make the wire steady. Nail a bunch of nails or hooks in a wall and hang those suckers up!

Pegboard- definitely a great means to keep things simple and movable.

Fresh Garden Pizza with micro-greens, shiitakes, and roasted squash seeds

We didn't have any yeast in the house so we made pizza with yeast free dough. Gotta say, making your own pizza is the way to go and really easy.

Preheat oven to 400°F

Dough

2 1/2 c. flour (we used whole wheat)
2 3/4 tsp. baking powder (if using baking soda use half and omit salt)
1 tsp. salt
1 tbsp. oil
3/4 to 1 c. water

Mix dry ingredients. add 3/4 cup water and oil. Stir until it forms a ball. If dough is stiff, add more water.

The dough will be soft, not sticky. Knead on a floured surface for 3-4 minutes. (source)

Sauce (great pasta sauce)

1 24 oz can pureed tomato

basil

oregano

thyme

brown sugar (optional)

sauteed minced garlic

sauteed diced onion

After rolling dough, add sauce
Place in oven for 7 min. Bake at 400°F for 15-25 minutes total
Take out and add grated cheese (of your choice, we used monterey jack)
shiitakes, and sliced green olives
Add micro-greens the last 2 minutes of cooking (you don't want these delicious suckers in too long!)
Last step: Add roasted squash seeds when pizza is done cooking (see roasted squash seed recipe)

Woohoo! Deliciousness.

Cumin Roasted Squash seeds

You've heard of roasted pumpkin seeds but really you can roast any squash seed. This time we roasted butternut squash seeds and they turned out delicious!

prepare:

-rinse seeds to get off most of the squashiness

-let seeds dry out very well overnight on a cookie/baking sheet

-if wanting to store for a few days, put them in an airtight container once dry

to cook:

-preheat oven to 425 degrees

-dump seeds into the bowl and lightly coat with olive oil until evenly covered.

-sprinkle on cumin, cayenne pepper, and salt then mix to coat evenly.

-spread over cookie/baking sheet in a single layer and place in oven until you hear a popping sound...in which case, they are ready! It is important to listen carefully and remove the sheet soon after the first popping; it should take only around 5-7 minutes.

-remove and scrape with spatula immediately to avoid burning and/or sticking. let cool and ENJOY! awesome on salads, I put some on a pizza, and of course by themselves. no refrigeration needed as long as you eat them within a few days.

Sweet Shiitake Mushroom Soup (no added sugar!)

Broth Mixture

2-3 c soy milk - unsweetened

1-2 c water

1 vegetable boilion cube
1/4 c rice vinegar

Sauteed mixture

10 shiitake mushrooms - cut each cap in 6 pieces
1 small white onion - fine chop
4 slices fresh ginger - minced

2 cloves garlic - diced
2 Tbsp olive oil

Directions
-saute onions, garlic, & ginger in 1 Tbs olive oil in cast iron pan
until clear
-add shiitakes and 1 Tbs olive oil
-add 1 Tbs rice vinegar
-cook 5-7 min
-In separate soup pot, add stir broth mixture and stir

-add sauteed mixture into soup pot
-cover & simmer for 3 minutes

Rhode Island School of Design Foundation students visited the "Garden of Life" to view the 14 Kenyan Top-Bar Beehives they designed and built. The project was led by architecture professor, Anastasia Congdon. This is the first stage in our "Pollinate Pawtucket" project, three bee colonies will arrive soon. University of Connecticut Illustration Art Installation

UCONN Illustration students installed their garden art sculptures in the "Garden of Life" led by Professor Cora-Lynn Deibler. Focus was given on outdoor art and using recycled materials. Coke cans, 2 liter bottles, a colander, scrap metal, ceramic pieces, and an old umbrella was used. Great job on the five projects, they look fantastic in the garden! Thank you UCONN Illustration! Orange Pan-glazed Tempeh Recipe

HS note: This recipe is equally good made with tofu. I made a couple minor tweaks to the recipe based on American ingredients/measurements. You can make a meal out of this by pairing it with some lightly sauteed seasonal vegetables, or in this case I simple served if over some left-over cooked wheat berries that I heated with a bit of chopped kale.

1 cup freshly squeezed orange juice (3-4 large juicy oranges)
1 tablespoon freshly grated ginger
2 teaspoons tamari (or soy sauce)
1 1/2 tablespoons mirin
2 teaspoons maple syrup
1/2 teaspoon ground coriander
2 small garlic cloves, crushed
roughly 10 ounces of tempeh (or extra-firm tofu)
2 tablespoons olive oil
1/2 lime
a handful of cilantro (coriander) leaves

Put the orange juice in a small bowl. Squeeze the grated ginger over the bowl to extract the juices, then discard the pulp. Add the tamari, mirin, and maple syrup, ground coriander, and garlic. Mix together and set aside.

Cut the tempeh (or tofu) into thin-ish, bite-sized pieces, and if working with tofu, pat dry with a paper towel.

Put the olive oil in a large frying pan over medium-high heat. When the oil is hot but not smoking, add the tempeh and fry for 5 minutes, or until golden underneath. Turn and cook the other side for another 5 minutes, or until golden. Pour the orange juice mixture into the pan and simmer for 10 minutes, or until the sauce has reduced to a lovely thick glaze. Turn the tempeh once more during this time and spoon the sauce over the tofu from time to time.

Serve the tempeh drizzled with any remaining sauce and a squeeze of lime, with the coriander scattered on top. Heidi note: As I mention in the head notes, I served this over some leftover wheat berries heated with a few handfuls of chopped kale.

Serves 4. (or two if you love it as much as we did -h)

Geodesic Dome Greenhouses and Aquaponics Build!

After a week of hard work, two geodesic domes are constructed and our first aquaponics system is installed! In conjunction with Blackstone Valley Community Action Program, New Urban Farmers led classes at Prospect Manor and Galego Court about parts of the plant, local birds you see in the spring, and how to squeeze fresh grapefruit juice! The kids felt seeds and bulbs of all shapes and sizes and had a great time. We then colored local birds, discussed mixing colors, and cut them out to hang from the ceiling in the community room.

Simple African/Caribbean stew

Sauté onions, ginger, and garlic with some salt and pepper. Then add peas and water...boil for 20 minutes then add the potato, cumin, coriander and a bit of crushed red pepper. When the taters are ready throw in the collards and cover for 10 minutes...optional: nutritional yeast. Enjoy!

Quick Brown Rice With Shitake And Sesame

1 cup brown rice - short or long grain-
3 shiitakes
dash of sesame oil
Tamari, Bragg Liquid Amino, or low sodium soy sauce (green label)

Bring water to boil add 1 cup rice, diced shiitakes, and sesame oil-
lower heat to low - simmer appx 45 minutes.
That's it!

Lazy Lentil Soup

1 cup diced onion
1 cup diced celery
1 cup green lentils
5-6 cups water
sea salt
1 kombu piece
1 cup whole wheat elbow or shell pasta

Place onions, celery, lentils, kombu, and water into pot-
cover and boil
reduce flame - simmer 45 minutes
season with sea salt - add uncooked noodles
simmer a tad more - uncovered - until tender

1 carrot
1 kombu piece
1 cup fresh snow peas
4-5 teaspoons barley miso

Place water, shiitake, carrot, and kombu into your favorite pot and bring to boil. Cover and reduce to med-low. Simmer 10 minutes. Remove kombu and slice thin - add back into pot. Reduce flame to low - add miso, and peas - simmer an additional 3-5 minutes
That is it! Yummy, yummy - loved by most.

Turnip People!

We are opening a clothing exchange store at Galego Court and we hope to be up and running next week! As you can see, we have had generous donations from employees at the Pawtucket Housing Authority and the community. Thank you to all who helped out.

Garden Wood Extra-ordinaries!

Students were asked to draw what came to mind when they thought about our community garden. What plants grow there? What do you like about it? What animals live there? After preliminary drawings were completed, drawings were enlarged and cut into plywood shapes. The students then painted the shapes using a variety of painting techniques and materials.

The cut-outs are displayed in our new clothing exchange at Galego Court.

We plan to continue this project. Updates will be posted soon.

We hope everyone had a wonderful holiday season! For the holidays, New Urban Farmers held a Christmas Chorus at Galego Court. The kids sang a couple of weeks ago at the holiday party. Great fun for all!

Mosaic Assemblage!

"The Garden of Life" was previously a playground that got run down over the years and glass was shattered there. We are now recycling that glass (that has been dulled by the sand) by making mosaics. This is our first finished mosaic assemblage named "Running Man." We plan to continue this project by making more mosaic "people" to add to the fence. Students ages 4-15 participated.

1. Wood was prepared with a protective glue coating and wire was laced between two holes to allow for hanging.

2. Glass was glued on reclaimed wood using abstract and nature based designs.

2. Grout was mixed and applied. When the grout began to cure after about 30 minutes, students used water and sponges to smooth out the grout.

4. Fully dried, the mosaics were assembled into the "Running Man" you see here.

Blue Yellow Paint Brush-less Day

The goal was to explore color mixing with a limited palette and experiment with materials. Students were given different hues of yellow and blue and many different materials to paint with except paint brushes. (sponges, Styrofoam, cottonballs, skewers, squirt bottle, sticks) Students painted first on brown paper and then transferred to light yellow cardboard. The students were encouraged to experiment with collage by cutting out elements from their first painting. Students created some very textured paintings!
