Broth Mixture
2-3 c soy milk - unsweetened
1-2 c water
1 vegetable boilion cube
1/4 c rice vinegar
1/4 c rice vinegar
Sauteed mixture
10 shiitake mushrooms - cut each cap in 6 pieces1 small white onion - fine chop
4 slices fresh ginger - minced
2 cloves garlic - diced
2 Tbsp olive oil
Directions
-saute onions, garlic, & ginger in 1 Tbs olive oil in cast iron pan
until clear
-add shiitakes and 1 Tbs olive oil
-add 1 Tbs rice vinegar
-cook 5-7 min
-In separate soup pot, add stir broth mixture and stir
2 Tbsp olive oil
