Easy Pisy Mashed Tortillas


1 1/2 c water
4 c dried or 2 can beans (pinto & red)
1 carrot (shredded)
1/2 c quinoa
1/2 c lime juice (to taste)
1/2 onion (diced)
Sriracha (or other hot sauce)
jalapenos (jar or fresh)
garlic (diced)
1 Tbs olive oil
Corn Tortillas

On high, saute onion, garlic in olive oil.
Add beans, quinoa, lime juice, jalapeno, Sriracha, carrot, and water.
Smash beans with whatever you have on hand (I use the bottom of a jar)
Cover and let sit 15 min or until quinoa is soft but still has some crunch.
Add water while cooking as needed.
