Fresh Garden Pizza with micro-greens, shiitakes, and roasted squash seeds

We didn't have any yeast in the house so we made pizza with yeast free dough. Gotta say, making your own pizza is the way to go and really easy.


Preheat oven to 400°F


Dough
2 1/2 c. flour (we used whole wheat)
2 3/4 tsp. baking powder (if using baking soda use half and omit salt)
1 tsp. salt
1 tbsp. oil
3/4 to 1 c. water
Mix dry ingredients. add 3/4 cup water and oil. Stir until it forms a ball. If dough is stiff, add more water.
The dough will be soft, not sticky. Knead on a floured surface for 3-4 minutes. (source)

Sauce (great pasta sauce)
1 24 oz can pureed tomato 
basil
oregano
thyme
brown sugar (optional)
sauteed minced garlic
sauteed diced onion

After rolling dough, add sauce
Place in oven for 7 min. Bake at 400°F for 15-25 minutes total
Take out and add grated cheese (of your choice, we used monterey jack)
shiitakes, and sliced green olives
Add micro-greens the last 2 minutes of cooking (you don't want these delicious suckers in too long!)
Last step: Add roasted squash seeds when pizza is done cooking (see roasted squash seed recipe)

Woohoo! Deliciousness.
